🔥 Wednesday Kitchen Insider: Perfect Pan-Seared Wagyu Steak at Home
Most people think Wagyu steak is only for five-star restaurants. The truth? With the right technique you can bring that melt-in-your-mouth experience right into your own kitchen. Here’s how we cook our ranch’s Fullblood Wagyu ribeyes for perfect results every time — no fancy equipment required.
📝 Ingredients

1 Wagyu ribeye or NY strip (1–1.5 inches thick)

Sea salt & freshly cracked black pepper

1–2 tablespoons butter (or Wagyu tallow if you have it)

Optional: 2 cloves garlic & a sprig of fresh thyme or rosemary
👩🍳 Step-by-Step
1. Temper the steak.
Remove your Wagyu from the fridge 30–45 minutes before cooking. This lets the marbling soften and helps the steak cook evenly.
2. Keep it simple.
Pat dry with paper towels. Season generously with salt and pepper on both sides. High-quality Wagyu doesn’t need heavy marinades — the flavor is already built in.
3. Heat your pan properly.
Use a heavy skillet (cast iron if you have it). Heat over medium-high until just shy of smoking. Add the butter or tallow and swirl to coat.
4. Sear without fussing.
Lay the steak in the pan and leave it alone for 2–3 minutes to develop a deep golden crust. Flip and cook another 2–3 minutes. For medium-rare, you’re aiming for 125°F internal temperature.
5. Baste for extra flavor.
Tilt the pan, spoon the hot butter/tallow over the steak, and toss in garlic and thyme during the last minute.
6. Rest before slicing.
Transfer to a cutting board, tent loosely with foil, and rest 5 minutes. This keeps the juices where they belong.

Because Wagyu has so much marbling, it cooks faster than lean beef. Err on the side of undercooking — you can always add another minute if needed.
