🐂 Monday on the Ranch: The Steers Are Home & the Freezers Are Filling Fast
If you’ve been following along with our move and our herd, you know life at The Hufeisen Ranch has been nothing short of an adventure lately. This past week we brought home four freshly processed Fullblood Wagyu steers. Walking into the cold room and seeing those beautiful sides of beef hanging was equal parts humbling and exhilarating. It’s the culmination of years of breeding, feeding, and caring for these animals the way nature intended—regeneratively raised on pasture with a supplement of non-GMO fermented corn that mimics what cattle would eat in the wild.
There’s a lot of buzz online about “grass-finished” or “grain-finished” beef. We’ve taken a different path. Our animals graze on diverse pastures for most of their lives, then receive a carefully fermented, locally sourced corn ration during finishing to boost marbling without wrecking the environment or their health. The result is a Wagyu fat profile that’s higher in oleic acid (the same heart-healthy fat found in olive oil) and CLA, while still tasting like the rich, buttery Wagyu you expect.
And yes—this week the freezers are filling fast. We’ve also got a small supply of American Wagyu (Wagyu-Angus cross) and a half Angus beef for our local customers. Seeing all those boxes lined up made me realize just how much food one steer can provide for families. Standing there, labeling boxes with my kids, I had one of those “this is why we do it” moments. We’re not just selling beef; we’re reclaiming the connection between land, animal, and family dinner tables.
